Jessie Cruz, a butcher in a small family owned slaughterhouse (abattoir) and meatpacking  company in Mead, Kansas. At this firm they typically slaughter ten animals each day but is one of only a few such sized companies in a region dominated by four giant meat packing plants that kill and process between five and six thousand cattle a day.
